ICED SPICED TEA

serves 6 - 8

6 tsp spicy tea (heaped)
1 1/2 pints cold water
4 tsp brown sugar (to taste)
1 tsp freshly grated ginger (optional)

Put all ingredients into a jug and leave in the fridge overnight or longer. Stir occasionally. Strain through thin muslin or a fine sieve, Strain again through clean muslin or sieve, Chill. Serve from a glass jug into glasses. Russian tea glasses look very good
